Ingredients
- 450g (1 lb) prawns, shells removed
- 2 tablespoons honey
- 2 teaspoons chipotle seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- Olive oil, for cooking
- 1 cup mango, chopped
- 1 cup cucumber, chopped
- 1 cup capsicum, diced
- 1/4 cup red onion, diced
- 1/2 cup coriander (cilantro) leaves, chopped
- Juice of 1 lime
Instructions
- In a large bowl, combine the chopped mango, cucumber, capsicum, red onion, coriander leaves, and lime juice. Toss thoroughly and set aside.
- Heat a pan over medium-high heat and drizzle in some olive oil.
- Season the prawns with chipotle seasoning, garlic powder, and salt, ensuring they are evenly coated.
- Add the seasoned prawns to the hot pan and cook for 1-2 minutes on each side until they turn pink and opaque.
- Warm tortillas in the microwave or on a griddle.
- To assemble, layer mango salsa on each tortilla, top with honey chipotle prawns, and garnish with fresh coriander leaves. Serve immediately.
