Description

Crispy and delicious shrimp egg rolls filled with plump shrimp and vibrant vegetables, perfect for any gathering or casual dinner.


Ingredients

  • 1 cup plump shrimp, peeled and deveined
  • 1 cup assorted crunchy vegetables (like cabbage, carrots, and bell peppers), finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Wonton wrappers
  • Oil for frying
  • Sweet chili sauce or soy sauce for serving


Instructions

  1. Heat a little oil in a skillet over medium heat and sauté garlic and ginger until fragrant.
  2. Add the shrimp and cook until pink; then add the chopped vegetables, soy sauce, and sesame oil.
  3. Cook until the veggies are tender. Remove from heat and let the mixture cool.
  4. Lay out a wonton wrapper and place a spoonful of the shrimp mixture in the center.
  5. Fold the wrapper over the filling, sealing the edges with a bit of water.
  6. Heat oil in a deep pan and fry the rolls until golden brown.
  7. Drain on paper towels and serve with sweet chili sauce or soy sauce.

Notes

For extra crunch, ensure the oil temperature is right before frying and avoid overcrowding the pan.
