Ingredients
- 800 g chicken breast, cut into halves
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp chili powder
- 2 tsp Cajun seasoning mix (1.5 tsp + 0.5 tsp)
- 2 tsp olive oil
- 25 g grass-fed butter for cooking
- 15 g grass-fed butter for the sauce
- 1 medium red onion, chopped
- 4-5 garlic cloves, chopped
- 250 ml milk
- 150 g light cream cheese
- 40 g Parmesan
- Fresh parsley for garnish
Instructions
- Marinate the chicken: In a glass container, combine 1.5 teaspoons of Cajun seasoning and olive oil. Coat the chicken breast pieces thoroughly. Seal the container and let it marinate overnight in the refrigerator.
- Cook the chicken: Heat a pan over medium-high heat. Add 25 grams of grass-fed butter and wait for it to melt. Cook the marinated chicken until it develops a crispy, golden crust, about 6-8 minutes on each side. Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing into strips.
- Sauté onions and garlic: In the same pan, add chopped red onion and garlic cloves. Sauté until fragrant and the onion becomes translucent.
- Cook the rice: Add the remaining Cajun seasoning mix and any day-old rice to the pan. Toss the rice until it absorbs the flavors.
- Make the sauce: Lower the heat and add 15 grams of butter. Slowly whisk in the milk until warmed. Then, stir in the light cream cheese and Parmesan until creamy and smooth.
- Plate the dish: On a plate, layer a bed of flavorful Cajun rice, place the sliced chicken on top, and drizzle the creamy sauce generously. Finish it off with fresh parsley.
- Serve and enjoy: With vibrant colors and rich flavors, sit back and enjoy your meal.
