Ingredients
- 1 pound shrimp, cleaned and deveined
- Corn or flour tortillas
- 2 cups coleslaw mix (green and purple cabbage, carrots)
- 1 ripe avocado, diced
- Shrimp taco sauce (made from mayonnaise, lime juice, and spices)
- Fresh cilantro, for garnish
- 1 lime, cut into wedges
- Salt and pepper, to taste
Instructions
- In a bowl, toss shrimp with lime juice, salt, and pepper.
- Cook shrimp in a skillet over medium heat until pink and opaque.
- Warm tortillas in a separate skillet or microwave.
- In another bowl, mix coleslaw with a bit of lime juice, salt, and cilantro.
- Assemble tacos by placing shrimp in a tortilla, adding slaw, avocado, and shrimp taco sauce.
- Serve with lime wedges on the side.
