Ingredients
- 1 pound shrimp, peeled and deveined
- 1 large cucumber, diced
- 3 green onions, sliced
- 1/4 cup fresh herbs (parsley or cilantro)
- 1/2 cup Greek yogurt or sour cream
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large bowl, mix the diced cucumber, sliced green onions, and chopped fresh herbs.
- In a separate bowl, combine Greek yogurt or sour cream and lime juice to make the dressing.
- Add the shrimp to the vegetable mixture, pour the dressing over, and toss gently until combined.
- Season with salt and pepper to taste and chill in the refrigerator for 30 minutes before serving.
Notes
For extra flavor, sauté or grill the shrimp before adding them to the salad. Consider leaving the dressing separate if preparing in advance.
