  • 2 medium sweet potatoes (about 400g)
  • 1/2 batch Vegan Queso
  • Toppings: black beans, mushroom walnut taco meat, tomatoes/salsa, jalapeño, corn, pickled red onions, guacamole, olives, cilantro


Instructions

  1. Begin by setting your air fryer to a temperature of 350°F. If using an oven, heat it to 450°F.
  2. Cut the sweet potatoes into thin slices, using a mandolin at 3mm if desired. Place them in a single layer inside the air fryer basket, cooking them for 10-15 minutes until they turn crispy but avoid burning. If you’re using the oven, lay the slices on a parchment-lined baking sheet and bake for 15 minutes.
