Description

Ingredients

  • 1 pound haddock fillets
  • 4 cups fish stock or clam broth
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 2 medium potatoes, diced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add the diced onion and chopped celery, cooking until softened.
  3. Introduce the diced potatoes and fish stock, bringing the mixture to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Gently add the haddock fillets and cook for another 5-7 minutes until the fish is cooked through.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

For a lighter option, replace part of the heavy cream with more stock. Adjust seasoning to taste.
