A vibrant and flavorful bowl featuring grilled shrimp, cilantro-lime rice, fresh vegetables, and beans, perfect for any meal.
Ingredients
- 1 lb large shrimp (peeled and deveined)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1.5 cups long-grain white rice (uncooked)
- 1/2 cup cilantro (freshly chopped)
- 2 tbsp lime juice (freshly squeezed)
- 1 can (15 oz) black beans (rinsed and drained)
- 1 cup corn (frozen, canned, or grilled)
- 1 cup cherry tomatoes (halved)
- 1 large avocado (diced)
- 1/4 cup red onion (thinly sliced)
Instructions
- Cook the rice according to package directions. Once finished, fluff with a fork and mix in the chopped cilantro and lime juice, then set aside.
- In a medium bowl, combine the shrimp, olive oil, minced garlic, smoked paprika, cumin, salt, and pepper. Toss to coat and let marinate for at least 15 minutes.
- Preheat your grill or grill pan to medium-high heat. If desired, skewer the shrimp for easy grilling.
- Grill the shrimp for 2-3 minutes per side until they turn pink and opaque. Avoid overcooking.
- To assemble, divide the cilantro-lime rice among four bowls and top each bowl with grilled shrimp, black beans, corn, cherry tomatoes, avocado, and red onion. Serve immediately.
Notes
Marinate shrimp in advance for deeper flavor. Adjust seasoning to taste before grilling.
