Description

A delightful grilled shrimp bowl featuring juicy shrimp, creamy avocado, and sweet corn, all tied together with a zesty lime dressing.


Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup corn, grilled or roasted
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, for garnish


Instructions

  1. Marinate the shrimp in a bowl with garlic, olive oil, lime juice, salt, and pepper. Allow to marinate for 15-30 minutes.
  2. If grilling the corn, slice the kernels off the cob once grilled and allow to cool.
  3. Preheat the grill to medium-high and thread marinated shrimp onto skewers, about 4-5 shrimp per skewer.
  4. Grill skewers for 2-3 minutes on each side until shrimp are pink and opaque.
  5. Assemble the bowl with grilled corn and diced avocado alongside the shrimp, and garnish with fresh cilantro.
