Ingredients
- 1 pound medium shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup corn, grilled or roasted
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Marinate the shrimp in a bowl with garlic, olive oil, lime juice, salt, and pepper. Allow to marinate for 15-30 minutes.
- If grilling the corn, slice the kernels off the cob once grilled and allow to cool.
- Preheat the grill to medium-high and thread marinated shrimp onto skewers, about 4-5 shrimp per skewer.
- Grill skewers for 2-3 minutes on each side until shrimp are pink and opaque.
