Description

A delicious and nutritious grilled shrimp bowl featuring juicy shrimp, creamy avocado, zesty corn salsa, and a rich creamy garlic sauce.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 cup corn (fresh or frozen)
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1/2 cup mayonnaise
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving


Instructions

  1. Preheat the grill to medium-high heat. Toss the shrimp with olive oil, salt, and pepper.
  2. Grill the shrimp for 2-3 minutes on each side until cooked through.
  3. In a bowl, combine corn, onion, tomatoes, cilantro, lime juice, and salt to make the corn salsa.
  4. In a small bowl, mix mayonnaise with minced garlic for the creamy garlic sauce.
  5. To assemble, place cooked rice or quinoa in a bowl. Top with grilled shrimp, avocado, corn salsa, and drizzle with creamy garlic sauce. Serve immediately.

Notes
