Ingredients
- 1 lb shrimp, peeled and deveined
- 1 avocado, diced
- 1 cup corn (fresh or frozen)
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 cloves garlic, minced
- 1/2 cup mayonnaise
- 1 tbsp olive oil
- Salt and pepper to taste
- Cooked rice or quinoa for serving
Instructions
- Preheat the grill to medium-high heat. Toss the shrimp with olive oil, salt, and pepper.
- Grill the shrimp for 2-3 minutes on each side until cooked through.
- In a bowl, combine corn, onion, tomatoes, cilantro, lime juice, and salt to make the corn salsa.
- In a small bowl, mix mayonnaise with minced garlic for the creamy garlic sauce.
- To assemble, place cooked rice or quinoa in a bowl. Top with grilled shrimp, avocado, corn salsa, and drizzle with creamy garlic sauce. Serve immediately.
Notes
For added depth of flavor, marinate the shrimp for 15-30 minutes before grilling. Customize corn salsa with additional veggies or herbs as desired.
