Description

This vibrant and flavorful grilled shrimp bowl features perfectly cooked shrimp, creamy avocado, and zesty corn salsa, topped with a rich garlic sauce.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 avocado, sliced or mashed
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Toss the shrimp in a bowl with olive oil, paprika, garlic powder, salt, black pepper, and cayenne (if using). Ensure each shrimp gets coated evenly.
  2. In another bowl, mix the corn, diced red onion, minced jalapeño (if using), chopped cilantro, lime juice, and salt. Set this colorful salsa aside to allow the flavors to meld.
  3. Preheat your grill and cook the shrimp for 2–3 minutes per side, until they turn pink and opaque.
  4. Whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and pepper in a bowl to form your creamy garlic sauce.
  5. Assemble your grilled shrimp bowl by layering a base of corn salsa, followed by grilled shrimp, and creamy avocado.
  6. Drizzle the creamy garlic sauce generously over your dish, and finish with a sprinkle of sesame seeds and chopped green onions.
