Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked white or brown rice
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1 cup corn kernels (fresh, canned, or grilled)
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream or Greek yogurt
  • 1 garlic clove, minced
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions

  1. Toss the shrimp with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper in a large bowl. Ensure every shrimp gets coated well with the mixture.
  2. Grill the shrimp for about 2-3 minutes on each side until they turn opaque and are lightly charred, approximately 6-8 minutes total.
  3. Combine corn, cherry tomatoes, red onion, cilantro, and lime juice in a separate bowl. Season with salt and pepper to taste.
  4. Whisk together mayonnaise, sour cream, minced garlic, lime juice, honey, salt, and pepper until smooth for the creamy garlic sauce.
  5. Assemble the bowl starting with the cooked rice as your base. Layer on the grilled shrimp, add avocado slices, and spoon on the corn salsa. Drizzle with the creamy garlic sauce.
  6. Serve immediately and enjoy the fresh flavors.

Notes

For a smoky flavor, consider using grilled corn in the salsa. Adjust spices to taste based on your preference for heat.
