- 60ml water
- 30ml lemon juice
- 60ml soy sauce
- 45ml sesame oil
- 1 tsp cardamom
- 1 tsp thyme
- ½ tsp black pepper
- 1 clove garlic, minced
- 113g fresh tuna steaks
Instructions
- Mix water, lemon juice, soy sauce, sesame oil, cardamom, thyme, black pepper, and minced garlic in a bowl to create the marinade.
- Place the fresh tuna steaks into a zip-lock bag, pour the marinade over, seal the bag, and mix to coat the tuna evenly.
- Marinate the tuna for 20 minutes, flipping halfway through.
- Heat a heavy skillet over medium-high heat.
- Remove tuna from marinade, letting excess drip off without drying it completely.
- Sear the tuna steaks for about 2 minutes on each side, brushing lightly with marinade during cooking.
- When internal temperature reaches 52°C, remove from heat and let rest for 2 minutes before serving.
Notes
Use the freshest tuna available. Consider adding honey or brown sugar to balance the marinade’s acidity.
