Delicious golden seared cod topped with a rich herb butter sauce – a quick and easy dish perfect for impressing family and friends.
Ingredients
- 4 cod fillets (6 oz each)
- 2 tbsp olive oil
- Salt (to taste)
- Freshly ground black pepper (to taste)
- 4 oz unsalted butter
- 1 clove garlic (minced)
- 1/2 lemon (juice only)
- 3 tbsp fresh parsley (finely chopped)
- 2 tbsp fresh dill (chopped)
- 1 tbsp fresh chives (chopped)
Instructions
- Pat the cod fillets dry with a paper towel. Season both sides generously with salt and freshly ground black pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the cod fillets in the pan and cook for 3-4 minutes on each side until golden brown and cooked through.
- Remove the cod from the pan and set aside. In the same skillet, reduce heat to medium and add unsalted butter.
- Once the butter melts, add the minced garlic and cook for 30 seconds until fragrant. Stir in parsley, dill, chives, and lemon juice.
- Return the cod to the skillet, spooning the herb butter sauce over the fillets. Warm for 1-2 minutes and serve with extra sauce drizzled on top.
Notes
Ensure cod is fresh for the best flavor. Use a meat thermometer to check the internal temperature; it should reach 145°F. Pair with sides like sautéed vegetables or a fresh salad.
