Description

Ingredients

  • 1 ½ lbs white fish fillets (cod or pollock)
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 eggs
  • ½ cup buttermilk
  • Vegetable oil (for frying)
  • Lemon wedges (for serving)


Instructions

  1. Dry the fish fillets with paper towels. Sprinkle salt and pepper on both sides.
  2. In one bowl, whisk together the eggs and buttermilk.
  3. In another bowl, mix the flour, cornmeal, garlic powder, onion powder, paprika, and cayenne pepper.
  4. Dip the fish fillets in the egg mixture, ensuring they’re well coated.
  5. Then coat the fillets in the flour-cornmeal mixture, pressing lightly to ensure maximum adherence.
  6. Repeat this process for all fish fillets.
  7. Heat oil in a pan to 350°F.
  8. Carefully place the fillets in the hot oil, not overcrowding the pan.
  9. Fry the fish for about 4 minutes on each side, until golden and crispy.
  10. When perfectly cooked, take the fish out and place it on a cooling rack.
  11. Let the fish cool for 2 minutes before serving.
