Ingredients

  • 1.1 pounds shrimp (peeled and deveined)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil (or vegetable oil)
  • 4 garlic cloves (minced)
  • 1 yellow onion (diced)
  • 1 can (14 oz) unsweetened coconut milk (full fat)
  • 2 teaspoons cornstarch
  • 2 tablespoons fish sauce
  • 1 teaspoon honey
  • 2 tablespoons lime juice
  • 2 tablespoons chopped cilantro (more for serving)
  • Chili flakes (for serving)
  • Freshly cracked black pepper (for serving)


Instructions

  1. Begin by heating 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a large skillet over high heat.
  2. Once hot, arrange the seasoned shrimp in a single layer and sear for one minute on each side until pink and firm.
  3. Remove shrimp from skillet and set aside.
  4. Lower the heat to medium-low, and sauté minced garlic and diced onion for about three minutes until soft.
  5. Pour ¾ of the coconut milk into the skillet, stirring to combine.
  6. In a small bowl, mix the remaining coconut milk with cornstarch until smooth, then add to the skillet and stir to thicken.
  7. Incorporate fish sauce, honey, and lime juice, letting it simmer for about two minutes.
  8. Stir in reserved cilantro and return shrimp to skillet, tossing gently until heated through.
  9. Adjust seasoning to taste.
  10. Serve with additional cilantro, chili flakes, and black pepper.

Notes

For a creamier sauce, consider increasing the amount of coconut milk. For different flavors, try grilling the shrimp or using spices like cumin.
