Ingredients

  • 500 grams cleaned squid
  • 3 tablespoons olive oil (or avocado oil)
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 4 cloves fresh garlic, minced
  • 1/4 cup chopped parsley
  • 1 cup breadcrumbs (gluten-free if necessary)
  • 1/2 teaspoon Espelette pepper (or cayenne)
  • 2 tablespoons vinegar (or lemon juice)
  • 1 teaspoon fresh or dried thyme


Instructions

  1. Preheat your grill to medium-high heat.
  2. Combine minced garlic, olive oil, salt, and pepper in a mixing bowl.
  3. Add the cleaned squid to the bowl, ensuring each piece gets coated with the oil and spices.
  4. Create a mixture with the breadcrumbs, Espelette pepper, and thyme in another bowl.
  5. Coat each squid in the breadcrumb mixture, shaking off any excess.
  6. Place the squid on the grill, cooking for about 2-3 minutes on each side.
  7. Remove the squid and drizzle them with vinegar.
  8. Sprinkle with chopped parsley before serving.
