Ingredients
- 1 lb (450 g) chicken breasts
- 5 medium-sized potatoes (about 1 kg)
- 2 tbsp (30 ml) olive oil
- salt, pepper, garlic powder, paprika (for potatoes)
- 1/2 tsp (2.5 ml) each of salt and pepper
- 1 tsp (5 ml) each of paprika, onion powder, and Italian seasoning
- 2 tbsp (30 ml) minced garlic
- Garlic Parmesan Sauce just enough to cover chicken
- 1 cup (125 g) of shredded mozzarella cheese
Instructions
- Rinse the potatoes and dice them into small pieces.
- Lightly coat a crockpot with a cooking spray.
- Place the diced potatoes into the crockpot. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika to taste.
- Incorporate minced garlic, mixing thoroughly with the potatoes and spices.
- Chop the chicken into bite-sized chunks.
- Sprinkle the chicken with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
- Pour in enough garlic Parmesan sauce to fully coat the chicken. You can add more sauce after cooking if desired.
- Let the mixture cook on a low setting for roughly 6 hours, or until the potatoes reach your preferred tenderness.
- Mix all the ingredients well.
- Sprinkle shredded mozzarella cheese on top and allow it to melt.
- Plate and savor! We added a bit of ranch on top, and it was delightful!
