Ingredients

  • 1 lb (450 g) chicken breasts
  • 5 medium-sized potatoes (about 1 kg)
  • 2 tbsp (30 ml) olive oil
  • salt, pepper, garlic powder, paprika (for potatoes)
  • 1/2 tsp (2.5 ml) each of salt and pepper
  • 1 tsp (5 ml) each of paprika, onion powder, and Italian seasoning
  • 2 tbsp (30 ml) minced garlic
  • Garlic Parmesan Sauce just enough to cover chicken
  • 1 cup (125 g) of shredded mozzarella cheese


Instructions

  1. Rinse the potatoes and dice them into small pieces.
  2. Lightly coat a crockpot with a cooking spray.
  3. Place the diced potatoes into the crockpot. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika to taste.
  4. Incorporate minced garlic, mixing thoroughly with the potatoes and spices.
  5. Chop the chicken into bite-sized chunks.
  6. Sprinkle the chicken with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  7. Pour in enough garlic Parmesan sauce to fully coat the chicken. You can add more sauce after cooking if desired.
  8. Let the mixture cook on a low setting for roughly 6 hours, or until the potatoes reach your preferred tenderness.
  9. Mix all the ingredients well.
  10. Sprinkle shredded mozzarella cheese on top and allow it to melt.
  11. Plate and savor! We added a bit of ranch on top, and it was delightful!
