Ingredients
- 3 medium carrots (about 225g) peeled and chopped into fries
- 1 tsp olive oil (5 ml)
- 5 tsp grated cheese (7.5 g)
- 1/8 tsp (1 ml) salt to taste
- 1/4 tsp garlic powder (1.25 g)
- 1/2 tsp (3 ml) mixed Italian herbs
- 100 g blended cottage cheese
- 1 tsp Dijon mustard (5 ml)
- 1/2 tsp (3 ml) sweetener
- 1-2 cloves garlic minced
- 1 tsp apple cider vinegar or white vinegar (5 ml)
- Salt and pepper to taste
- 1/2 tsp (3 ml) mixed herbs
Instructions
- Scrub, peel, and trim the carrots, then slice them into fry-like shapes.
- Place the carrot slices in a bowl, drizzle with oil, add seasonings and grated cheese, and use your hands to ensure they are evenly coated.
- Move the carrots to an air fryer set to 180°C or 350°F, cooking them for 20 minutes and giving them a shake or turn at the midway point.
- For the oven method, roast at 220°C or 425°F for 20-25 minutes, turning them over once halfway through the cooking time.
- Combine the ingredients for the protein-rich dip thoroughly until smooth.
- Sprinkle with additional cheese and herbs as a finishing touch.
