Description
A simple yet delicious roasted salmon dish infused with garlic and lemon, perfect for weeknight dinners.
Ingredients
- 2 lbs (900g) Salmon Fillet
- 2 tablespoons Extra Virgin Olive Oil
- 4-6 cloves Garlic, minced
- 1 large Lemon (for zest and juice)
- 1 teaspoon Dried Oregano
- ½ teaspoon Sea Salt
- ¼ teaspoon Black Pepper, freshly ground
- 2 tablespoons Fresh Parsley, chopped
- 1 additional Lemon, thinly sliced (for roasting)
Instructions
- Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper.
- Slice the lemon thinly and lay half of the lemon rounds on the parchment paper.
- Pat the salmon fillet dry with paper towels and place it on top of the lemon slices.
- In a small bowl, combine the olive oil, minced garlic, zest, and juice of one lemon. Whisk in the dried oregano, sea salt, and black pepper.
- Pour the garlic lemon mixture over the salmon, spreading it evenly. Place remaining lemon slices around the salmon.
- Roast for 15-20 minutes until the salmon flakes easily and the internal temperature is 130-135°F.
- Remove from the oven, sprinkle with chopped parsley, and let rest for 3-5 minutes.
- Serve on a platter with pan juices drizzled on top.
Notes
For added flavor, consider marinating the salmon in the garlic mixture for up to an hour before roasting.
