Description

A simple yet delicious roasted salmon dish infused with garlic and lemon, perfect for weeknight dinners.


Ingredients

  • 2 lbs (900g) Salmon Fillet
  • 2 tablespoons Extra Virgin Olive Oil
  • 4-6 cloves Garlic, minced
  • 1 large Lemon (for zest and juice)
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Black Pepper, freshly ground
  • 2 tablespoons Fresh Parsley, chopped
  • 1 additional Lemon, thinly sliced (for roasting)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper.
  2. Slice the lemon thinly and lay half of the lemon rounds on the parchment paper.
  3. Pat the salmon fillet dry with paper towels and place it on top of the lemon slices.
  4. In a small bowl, combine the olive oil, minced garlic, zest, and juice of one lemon. Whisk in the dried oregano, sea salt, and black pepper.
  5. Pour the garlic lemon mixture over the salmon, spreading it evenly. Place remaining lemon slices around the salmon.
  6. Roast for 15-20 minutes until the salmon flakes easily and the internal temperature is 130-135°F.
  7. Remove from the oven, sprinkle with chopped parsley, and let rest for 3-5 minutes.
  8. Serve on a platter with pan juices drizzled on top.

Notes

For added flavor, consider marinating the salmon in the garlic mixture for up to an hour before roasting.
