Description

Delicious garlic butter shrimp skewers, perfect for quick weeknight dinners or weekend gatherings, infused with zesty lemon and aromatic herbs.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4-5 garlic cloves, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, for garnish
  • Wooden or metal skewers


Instructions

  1. Rinse the shrimp under cold water, peel and devein them, and pat dry with paper towels.
  2. Melt the unsalted butter with olive oil in a saucepan over low heat. Add minced garlic, lemon juice, lemon zest, dried oregano, and paprika. Season with salt and pepper to taste.
  3. Place the shrimp in a mixing bowl and pour the garlic butter marinade over them. Toss gently to coat and refrigerate for at least 30 minutes.
  4. If using wooden skewers, soak them for 30 minutes. Thread shrimp onto the skewers, leaving space between each shrimp.
  5. Preheat your grill or skillet over medium-high heat. Brush grill grates with oil if grilling.
  6. Cook the skewers on the grill for 2-3 minutes per side until the shrimp turn pink.
  7. Remove from heat, sprinkle with fresh parsley, and serve hot with lemon wedges.

Notes

Allow the shrimp to marinate for at least 30 minutes for better flavor. Consider using smoked paprika for a richer taste.
