Description

A flavorful and nutritious dish featuring crispy salmon, earthy mushrooms, and vibrant spinach in a creamy garlic butter sauce.


Ingredients

  • 4 fillets Salmon
  • To taste Salt
  • To taste Freshly Ground Black Pepper
  • 1 tablespoon Olive Oil
  • 4 tablespoons Unsalted Butter
  • 4 cloves Garlic (minced)
  • 8 ounces Baby Bella Mushrooms (sliced)
  • 4 cups Fresh Spinach
  • 1 cup Heavy Cream
  • 1/2 cup Grated Parmesan Cheese
  • 1 teaspoon Italian Seasoning
  • 2 tablespoons Lemon Juice
  • 1/4 cup Fresh Parsley (chopped, for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Once the oil is hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy.
  3. Gently flip the salmon using a spatula and add 2 tablespoons of butter. Cook for an additional 4-5 minutes until it reaches a safe internal temperature.
  4. Remove salmon from the skillet and set aside on a plate.
  5. Add the remaining butter to the skillet. Sauté minced garlic until fragrant.
  6. Incorporate sliced baby Bella mushrooms into the skillet and cook until softened.
  7. Add fresh spinach and allow it to wilt.
  8. Pour in heavy cream, stirring to combine. Simmer gently and let it thicken slightly.
  9. Stir in grated Parmesan cheese, Italian seasoning, and lemon juice until smooth.
  10. Return the salmon to the skillet, coating it with the creamy sauce. Cook for an additional minute.
  11. Garnish with freshly chopped parsley before serving.

Notes

Serve over a bed of sautéed spinach for a visually appealing presentation. Pairs well with whole-grain rice or crusty bread.
