Ingredients
- 4 fillets Salmon
- To taste Salt
- To taste Freshly Ground Black Pepper
- 1 tablespoon Olive Oil
- 4 tablespoons Unsalted Butter
- 4 cloves Garlic (minced)
- 8 ounces Baby Bella Mushrooms (sliced)
- 4 cups Fresh Spinach
- 1 cup Heavy Cream
- 1/2 cup Grated Parmesan Cheese
- 1 teaspoon Italian Seasoning
- 2 tablespoons Lemon Juice
- 1/4 cup Fresh Parsley (chopped, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Once the oil is hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy.
- Gently flip the salmon using a spatula and add 2 tablespoons of butter. Cook for an additional 4-5 minutes until it reaches a safe internal temperature.
- Remove salmon from the skillet and set aside on a plate.
- Add the remaining butter to the skillet. Sauté minced garlic until fragrant.
- Incorporate sliced baby Bella mushrooms into the skillet and cook until softened.
- Add fresh spinach and allow it to wilt.
- Pour in heavy cream, stirring to combine. Simmer gently and let it thicken slightly.
- Stir in grated Parmesan cheese, Italian seasoning, and lemon juice until smooth.
- Return the salmon to the skillet, coating it with the creamy sauce. Cook for an additional minute.
- Garnish with freshly chopped parsley before serving.
Notes
Serve over a bed of sautéed spinach for a visually appealing presentation. Pairs well with whole-grain rice or crusty bread.
