Description

A simple yet sophisticated garlic butter baked cod dish that highlights fresh cod fillets with a rich and zesty sauce.

Ingredients

  • 4 fresh cod fillets (about 6 oz each)
  • 1/2 cup unsalted butter (1 stick)
  • 4 cloves fresh garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a baking dish with nonstick spray.
  3. Melt the butter in a small saucepan over medium heat.
  4. Add the minced garlic and sauté for 1 minute.
  5. Stir in the lemon juice and remove the saucepan from the heat.
  6. Place the cod fillets in the prepared baking dish.
  7. Pour the garlic butter mixture evenly over the fillets.
  8. Season the cod with salt and pepper to taste.
  9. Bake for 12–15 minutes, or until the fish flakes easily with a fork.
  10. Garnish with chopped parsley before serving.

Notes

For a crisp texture, broil the cod for the last couple of minutes. Serve with a side of roasted vegetables or salad.
