Ingredients
- 2 1/2 lbs (1.1 kg) whole chicken wings, flat & drumette piece split – tips reserved for later use or discarded (about 24 total wing parts)
- 2 teaspoons olive oil (10 ml)
- 1 tablespoon baking powder (aluminum-free) (15 g)
- 1 teaspoon garlic powder (5 g)
- 1/2 teaspoon smoked paprika (2.5 g)
- 1/2 teaspoon ground white pepper (2.5 g)
- kosher salt, to taste
- 5 tablespoons beef tallow or vegetable oil (70 g)
- 10 cloves of garlic, finely minced – or pressed
- 1 heaping tablespoon chopped parsley
- 1/3 cup (80 ml) freshly grated alternative cheese
Instructions
- Use a paper towel to thoroughly dry the chicken wings. Place the wings in a large mixing bowl and drizzle them with olive oil. In a separate small bowl, combine the baking powder, garlic powder, smoked paprika, white pepper, and salt. Sprinkle this blend over the wings. Wearing disposable gloves if you prefer, use your hands to thoroughly rub the mixture into the wings until they are evenly coated. Set the wings aside for now.
- Place the wings in the air fryer, ensuring not to overcrowd the basket. You might need to work in batches, depending on the size of your air fryer. Set the air fryer to 400°F and cook the wings for 20 minutes, making sure to flip them halfway through. If you prefer your wings extra crispy, you can extend the cooking time by a few minutes.
- During the last 5 minutes of the wings’ cooking time, prepare the garlic butter sauce. In a small saucepan over low heat, combine the beef tallow or vegetable oil, minced garlic, and parsley. Allow the mixture to melt and blend thoroughly, then remove it from the heat.
- Transfer the crispy wings to a large bowl made of stainless steel or any other large bowl. Pour the garlic butter sauce over the wings, add the freshly grated alternative cheese, and toss everything together until the wings are completely coated. Serve the garlic wings hot and enjoy!
