Description

Ingredients

  • Fresh cod fillets
  • Flour
  • Cornstarch (optional, for added crispiness)
  • Breadcrumbs or panko
  • 1 Egg
  • 1/2 cup Milk
  • Salt
  • Pepper
  • Oil for frying
  • Lemon wedges (for serving)


Instructions

  1. Pat cod fillets dry and season with salt and pepper.
  2. Set up a breading station with flour, a beaten egg mixed with milk, and breadcrumbs or panko.
  3. Dredge fillets in flour, dip in egg mixture, then coat with breadcrumbs.
  4. Heat oil in a frying pan over medium heat.
  5. Fry coated cod fillets for 4-5 minutes on each side until golden brown.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve with lemon wedges for squeezing over the fish.

Notes

For added crunch, mix cornstarch with flour. Avoid overcrowding the pan while frying.
