Ingredients
- Fresh cod fillets
- Flour
- Cornstarch (optional, for added crispiness)
- Breadcrumbs or panko
- 1 Egg
- 1/2 cup Milk
- Salt
- Pepper
- Oil for frying
- Lemon wedges (for serving)
Instructions
- Pat cod fillets dry and season with salt and pepper.
- Set up a breading station with flour, a beaten egg mixed with milk, and breadcrumbs or panko.
- Dredge fillets in flour, dip in egg mixture, then coat with breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry coated cod fillets for 4-5 minutes on each side until golden brown.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve with lemon wedges for squeezing over the fish.
Notes
For added crunch, mix cornstarch with flour. Avoid overcrowding the pan while frying.
