Description
Vibrant and refreshing shrimp spring rolls filled with fresh veggies and served with a sweet and savory peanut dipping sauce.
Ingredients
- 8 rice paper wrappers
- 8 oz shrimp, cooked and peeled
- 1 cup lettuce, shredded
- 1 cup carrots, julienned
- 1/2 cup cucumber, julienned
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey
- Water, to thin the dipping sauce as needed
Instructions
- Prepare all ingredients by slicing and washing the vegetables and herbs thoroughly.
- Dip each rice paper wrapper in warm water for about 10 seconds to soften.
- Lay the wrapper flat on a clean surface.
- Place a few shrimp and a handful of the prepared vegetables and herbs towards the bottom of the wrapper.
- Fold the bottom up over the filling.
- Fold the sides in, making sure to roll tightly.
- Repeat the process until all the shrimp and vegetables are used.
- To make the peanut dipping sauce, mix peanut butter, soy sauce, lime juice, and honey in a bowl, adding water until you reach your desired consistency.
- Serve the fresh shrimp spring rolls with the peanut dipping sauce for dipping.
