Description

Vibrant and refreshing shrimp spring rolls filled with fresh veggies and served with a sweet and savory peanut dipping sauce.


Ingredients

  • 8 rice paper wrappers
  • 8 oz shrimp, cooked and peeled
  • 1 cup lettuce, shredded
  • 1 cup carrots, julienned
  • 1/2 cup cucumber, julienned
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • Water, to thin the dipping sauce as needed


Instructions

  1. Prepare all ingredients by slicing and washing the vegetables and herbs thoroughly.
  2. Dip each rice paper wrapper in warm water for about 10 seconds to soften.
  3. Lay the wrapper flat on a clean surface.
  4. Place a few shrimp and a handful of the prepared vegetables and herbs towards the bottom of the wrapper.
  5. Fold the bottom up over the filling.
  6. Fold the sides in, making sure to roll tightly.
  7. Repeat the process until all the shrimp and vegetables are used.
  8. To make the peanut dipping sauce, mix peanut butter, soy sauce, lime juice, and honey in a bowl, adding water until you reach your desired consistency.
  9. Serve the fresh shrimp spring rolls with the peanut dipping sauce for dipping.
