Ingredients

  • 1 cup warm whole milk (105 to 110 F) (240 ml)
  • 1 (0.25-ounce/7g) packet active dry yeast (2 1/4 teaspoon (11 ml) s)
  • 1/4 cup plus 1 teaspoon granulated sugar divided (62 g)
  • 6 tablespoon s melted unsalted butter (85 g)
  • 1 large egg at room temperature
  • 3 cups all-purpose flour plus additional for dusting (360 g)
  • 1/2 teaspoon (3 ml) salt
  • Coconut or olive oil cooking spray
  • 3 cups confectioners’ sugar (120 g)
  • 1/2 cup whole milk (120 ml)
  • 2 tablespoon (30 ml) s melted unsalted butter
  • 1/2 teaspoon (3 ml) vanilla extract


Instructions

  1. In a small container, combine the warm milk, yeast, and 1 teaspoon of sugar by whisking. Allow it to sit until it becomes very foamy, which should take 5 to 10 minutes.
  2. In a stand mixer bowl with a dough hook, blend the melted butter, egg, and the rest of the 1/4 cup sugar until smooth. Add the yeast mixture to this and mix until integrated. Pour in the flour and salt, and mix on a low setting until a rough dough begins to form. Turn to medium-low speed and knead for around 5 minutes until the dough becomes smooth and stretchy. It will be a bit sticky.
  3. Move the dough into a large bowl that has been lightly coated with oil. Cover it and allow it to rise in a warm, draft-free spot until its size doubles, which should take about 1 hour and 15 minutes.
  4. Prepare a large baking sheet with parchment paper and a sprinkle of flour.
  5. Deflate the risen dough by punching it down. Roll the dough on a floured surface to a thickness of 1/2 inch forming a rectangle. Use a donut cutter to make 12 donuts and 12 donut holes, re-rolling excess dough if needed. Alternatively, use a 3-inch and a 1-inch round cutter to shape the donuts. Arrange the donuts and holes on the prepared baking sheet. Cover them loosely and let them rise again in a warm area until doubled, approximately 15 to 20 minutes.
  6. Heat the air fryer to 350°F for 10 minutes. Apply cooking spray to the air fryer basket.
  7. Place the donuts in the basket in a single layer, ensuring they are about 1 inch apart, working in batches. Lightly coat the tops with oil spray.
  8. For donut holes, cook for 6 minutes, and for larger donuts, cook for 8 minutes or until they reach a golden hue. It is advisable to fry the larger donuts and holes separately since their cooking times vary slightly.
  9. In a medium mixing bowl, whisk together the confectioners’ sugar, milk, melted butter, and vanilla until the mixture is smooth. Dunk the warm donuts and holes into the glaze. Set them on a wire rack to allow the glaze to set for about 5 minutes before serving. Keep any remaining donuts in an airtight container for up to 3 days.
