Ingredients
- 1 pound shrimp, peeled and deveined
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger, sauté for about 30 seconds.
- Add shrimp and cook until pink, about 2-3 minutes.
- Introduce mixed vegetables and stir-fry for 4-5 minutes until tender-crisp.
- Pour in soy sauce, stir to combine, and season with salt and pepper.
- Serve over cooked rice or noodles.
