Ingredients
- 5 lbs (1.13 kg) chicken wings, split
- 1 tbsp (15 ml) avocado oil
- 1 tsp (5 g) sea salt
- 1 tsp (5 g) garlic powder
- 1/2 tsp (2.5 g) onion powder
- 1/2 tsp (2.5 g) smoked paprika
- 1/4 tsp (1.25 g) ground black pepper
- 2 tbsp (28 g) beef fat
- 2 tbsp (28 g) chopped red bell pepper
- Zest and juice of 1 lime
- 1 tsp (5 ml) apple juice (optional)
- Lime wedges and herbs for serving
Instructions
- Dry the wings thoroughly and mix them with avocado oil, sea salt, garlic powder, onion powder, smoked paprika, and black pepper. Allow them to rest for 15-20 minutes.
- Cook on a grill over medium-high heat for 20-25 minutes, flipping every 5 minutes, or bake at 425°F for 40-45 minutes, or use an air fryer set to 400°F for 20-24 minutes.
- Prepare the sauce by heating beef fat until melted, then blend in chopped red bell pepper, lime zest, lime juice, and apple juice if desired. Let it simmer for 1-2 minutes.
- Coat the freshly cooked wings with the warm sauce immediately. Present with lime wedges and herbs.

- Marinate chicken wings in the seasoning mixture overnight for extra flavor.
- Add a pinch of cayenne pepper or chili powder for a spicier kick.
- To enhance the sauce’s tanginess, include vinegar or hot sauce before simmering.
