  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, diced
  • 4 cups fish stock or water
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. Begin by cooking the chopped bacon over medium heat in a large pot until it becomes crispy.
  2. Remove the bacon from the pot, setting it aside while leaving the drippings behind.
  3. Add the diced onion, carrots, and celery, sautéing them until softened.
  4. Stir in the diced potatoes, giving them a few minutes to absorb the flavors.
  5. Pour in the fish stock or water, bringing everything to a gentle simmer.
  6. Allow the chowder to bubble away until the potatoes become tender.
  7. Add the fish chunks to the pot and cook for 5-7 minutes until the fish is thoroughly cooked through.
  8. Stir in the heavy cream and season the chowder with salt and pepper to taste.
