- 4 slices bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, diced
- 4 cups fish stock or water
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Begin by cooking the chopped bacon over medium heat in a large pot until it becomes crispy.
- Remove the bacon from the pot, setting it aside while leaving the drippings behind.
- Add the diced onion, carrots, and celery, sautéing them until softened.
- Stir in the diced potatoes, giving them a few minutes to absorb the flavors.
- Pour in the fish stock or water, bringing everything to a gentle simmer.
- Allow the chowder to bubble away until the potatoes become tender.
- Add the fish chunks to the pot and cook for 5-7 minutes until the fish is thoroughly cooked through.
- Stir in the heavy cream and season the chowder with salt and pepper to taste.
- Serve in bowls garnished with the crispy bacon and fresh parsley.
Notes
Create a lighter version by replacing bacon with turkey bacon or pancetta. Customize with seasonal vegetables or fresh herbs.
