Description

Vibrant and flavorful Fiesta Lime Shrimp Bowls featuring marinated shrimp, fluffy rice, and fresh vegetables.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked fluffy rice
  • 1 cup fire-roasted corn
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro for the sauce
  • Juice of 1 lime for the sauce

Instructions

  1. Begin the joyful cooking process by marinating the shrimp. In a bowl, combine lime juice, olive oil, chili powder, cumin, salt, and pepper. Add the shrimp, ensuring they all get an even coating. Let the shrimp marinate for 10 minutes to absorb all those zesty flavors.
  2. Once marinated, heat a skillet over medium-high heat. Add the shrimp in a single layer, cooking for about 2-3 minutes on each side until they turn pink and are fully cooked.
  3. While the shrimp is cooking, prepare your creamy cilantro sauce. In a blender, combine sour cream, 1/4 cup cilantro, and juice from one lime. Blend until smooth, creating a tangy sauce that will complement your bowl perfectly.
  4. Now comes the fun part—assembly. Divide the cooked fluffy rice into bowls. Top with the cooked shrimp, adding in portions of fire-roasted corn and halved cherry tomatoes. Sprinkle some chopped cilantro over the top for a fresh kick. Drizzle with creamy cilantro sauce before serving.

Notes

Consider using fresh shrimp for best flavor. Adjust spices in the marinade to your heat preference.
