Description

A simple and flavorful baked cod dish, enhanced with zesty lemon and fresh dill.


Ingredients

  • 4 fresh cod fillets (about 6 ounces each)
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line your baking sheet with parchment paper or lightly grease it with olive oil.
  3. Combine olive oil, lemon zest and juice, minced garlic, chopped dill, salt, pepper, and red pepper flakes in a bowl. Whisk until combined.
  4. Pat cod fillets dry with paper towels.
  5. Place cod on the baking sheet and spoon the lemon dill mixture over each piece.
  6. Bake for 12-15 minutes until the fish is opaque and flakes easily with a fork.
  7. Remove from the oven and let the fish rest for 2 minutes before serving.
