A simple and flavorful baked cod dish, enhanced with zesty lemon and fresh dill.
Ingredients
- 4 fresh cod fillets (about 6 ounces each)
- Zest and juice of 1 lemon
- 2 tablespoons fresh dill, chopped
- 2 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Optional: pinch of red pepper flakes
Instructions
- Preheat your oven to 400°F (200°C).
- Line your baking sheet with parchment paper or lightly grease it with olive oil.
- Combine olive oil, lemon zest and juice, minced garlic, chopped dill, salt, pepper, and red pepper flakes in a bowl. Whisk until combined.
- Pat cod fillets dry with paper towels.
- Place cod on the baking sheet and spoon the lemon dill mixture over each piece.
- Bake for 12-15 minutes until the fish is opaque and flakes easily with a fork.
- Remove from the oven and let the fish rest for 2 minutes before serving.
Notes
For optimal results, ensure the cod is patted dry before cooking. Experiment with seasoning for a personal touch.
