Description

A quick and satisfying meal made with pasta and canned salmon, enhanced with garlic and lemon.


Ingredients

  • 8 oz of pasta (spaghetti or your choice)
  • 1 can of salmon (approximately 14 oz)
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish (optional)


Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the canned salmon (drained) to the pan, breaking it up gently with a spoon.
  4. Stir in the lemon juice and season with salt and pepper to taste.
  5. Add the cooked pasta to the pan and toss to combine everything thoroughly.
  6. Serve hot, garnished with fresh parsley or basil if desired.

Notes

Taste as you go and feel free to add red pepper flakes for heat. Spinach or kale can be added for extra nutrients.
