Description

A delightful and refreshing Mexican shrimp cocktail perfect for summer gatherings, combining succulent shrimp with zesty sauces and fresh vegetables.


Ingredients

  • 1 lb cooked shrimp (peeled, deveined, tails removed)
  • 1 cup Clamato juice (or tomato juice)
  • 1/4 cup ketchup
  • 2 tbsp fresh lime juice
  • 1 tbsp hot sauce (optional)
  • 1/2 cup red onion (finely diced)
  • 1/2 cup tomato (finely diced)
  • 1/2 cup cucumber (finely diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 avocado (diced or sliced for garnish)
  • Salt and pepper (to taste)
  • Tortilla chips or saltine crackers (for serving)


Instructions

  1. Prepare your veggies by finely dicing the red onion, tomato, and cucumber. Chop the fresh cilantro to ensure freshness throughout the dish.
  2. In a bowl, whisk together the Clamato juice (or tomato juice), ketchup, lime juice, and hot sauce if you’re including it.
  3. Add the cooked shrimp, diced red onion, tomato, cucumber, and chopped cilantro to the bowl with the sauce. Gently stir the ingredients until combined.
  4. Season the mixture with salt and pepper to your liking. Cover the bowl and chill in the fridge for at least 30 minutes to allow the flavors to meld beautifully.
  5. When you’re ready to serve, gently stir again. Ladle the mixture into glasses or bowls. Top with avocado slices and serve with tortilla chips or saltine crackers.

Notes

For an authentic touch, consider using a sprinkle of Tajín before serving, and serving in clear glasses for presentation.
