Description

A quick and flavorful one pan meal featuring Cajun seasoned shrimp, fresh vegetables, and minimal cleanup.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn (fresh or frozen)
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onion and bell pepper, and sauté until soft.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the shrimp to the pan and sprinkle with Cajun seasoning.
  5. Cook until the shrimp are pink and cooked through, about 3-5 minutes.
  6. Add the corn and toss everything to combine.
  7. Season with salt and pepper to taste.
  8. Serve with lemon wedges.

Notes

For extra flavor, marinate shrimp in Cajun seasoning for 15-30 minutes before cooking. Serve with rice or salad.
