Description

A flavorful dish featuring fish fillets baked with fresh herbs, tomatoes, and olives, perfect for any occasion.


Ingredients

  • 2 Fish fillets (cod, halibut, or sea bass)
  • 6 sprigs Thyme, finely chopped
  • 3 sprigs Rosemary, finely chopped
  • 1 tsp Dried Oregano
  • 2 tsp Chopped or dried Parsley
  • 4 Garlic cloves, minced
  • 1 tsp Lemon zest
  • 1 tbsp Fresh Lemon juice
  • 1 tbsp Sweet chili sauce
  • ½ tsp Salt
  • ½ tsp Black pepper
  • ¼ cup Olive oil
  • 1 cup Cherry tomatoes, halved
  • ½ cup Pitted Olives


Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish.
  2. Combine olive oil, lemon juice, sweet chili sauce, thyme, rosemary, oregano, parsley, lemon zest, minced garlic, salt, and black pepper in a small bowl; whisk until well combined.
  3. Spoon about half of the marinade over both sides of the fish fillets, rubbing gently to coat.
  4. Combine the halved cherry tomatoes and pitted olives in a medium bowl; drizzle with the remaining marinade and toss to coat thoroughly.
  5. Spread the marinated tomatoes and olives on the bottom of the baking dish; place the marinated fish fillets on top of the vegetables.
  6. Bake for 15-20 minutes, or until the fish flakes easily with a fork and turns opaque.
  7. Allow resting for a minute or two before serving; spoon the savory juices and roasted vegetables over the fish for a delightful finish.

Notes

Serve with crusty bread and a side of green salad or couscous for a complete meal. Store leftovers in the refrigerator for up to two days.
