Description
A flavorful dish featuring fish fillets baked with fresh herbs, tomatoes, and olives, perfect for any occasion.
Ingredients
- 2 Fish fillets (cod, halibut, or sea bass)
- 6 sprigs Thyme, finely chopped
- 3 sprigs Rosemary, finely chopped
- 1 tsp Dried Oregano
- 2 tsp Chopped or dried Parsley
- 4 Garlic cloves, minced
- 1 tsp Lemon zest
- 1 tbsp Fresh Lemon juice
- 1 tbsp Sweet chili sauce
- ½ tsp Salt
- ½ tsp Black pepper
- ¼ cup Olive oil
- 1 cup Cherry tomatoes, halved
- ½ cup Pitted Olives
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking dish.
- Combine olive oil, lemon juice, sweet chili sauce, thyme, rosemary, oregano, parsley, lemon zest, minced garlic, salt, and black pepper in a small bowl; whisk until well combined.
- Spoon about half of the marinade over both sides of the fish fillets, rubbing gently to coat.
- Combine the halved cherry tomatoes and pitted olives in a medium bowl; drizzle with the remaining marinade and toss to coat thoroughly.
- Spread the marinated tomatoes and olives on the bottom of the baking dish; place the marinated fish fillets on top of the vegetables.
- Bake for 15-20 minutes, or until the fish flakes easily with a fork and turns opaque.
- Allow resting for a minute or two before serving; spoon the savory juices and roasted vegetables over the fish for a delightful finish.
Notes
Serve with crusty bread and a side of green salad or couscous for a complete meal. Store leftovers in the refrigerator for up to two days.
