Transform cod fillets into a flavorful dish with a sweet and tangy ginger-soy marinade, perfect for quick weeknight dinners.
Ingredients
- 4 cod fillets (5–6 oz each)
- ¼ cup low-sodium soy sauce
- 1 tbsp sesame oil
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1½ tsp fresh grated ginger
- 2 cloves garlic, minced
- 1 tsp cornstarch
- 1 tbsp water
- Green onions, chopped (for garnish)
- Sesame seeds (for garnish)
- Red pepper flakes or sriracha (optional, for heat)
Instructions
- Whisk together soy sauce, sesame oil, honey or maple syrup, rice vinegar, minced garlic, and fresh grated ginger until well combined.
- Place the cod fillets in a shallow dish or resealable plastic bag, pour the marinade over the fish, and ensure each piece is well coated. Marinate for 15 to 30 minutes.
- Preheat your oven to 400°F (200°C). Place marinated cod on a parchment-lined baking dish and bake for 12 to 15 minutes.
- Heat a small amount of oil in a skillet over medium heat, add the cod fillets, and cook for 3 to 4 minutes per side.
- Pour any leftover marinade into a saucepan, bring to a simmer, and mix cornstarch with water to create a slurry, then stir it into the simmering marinade until thickened.
- Serve the cooked cod on plates, drizzled with the thickened glaze, and garnished with chopped green onions and sesame seeds.
Notes
For best flavor, marinate for at least 30 minutes. Adjust cooking time based on fillet thickness and avoid overcrowding in the skillet.
