Description

Ingredients

  • 1.5 lbs white fish fillets
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped celery
  • 2 cups diced potatoes
  • 4 cups fish stock
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons parsley, chopped


Instructions

  1. Heat the olive oil in a large pot over medium heat until hot.
  2. Add the chopped onion to the pot, sautéing until translucent.
  3. Stir in the minced garlic and cook until fragrant.
  4. Toss in the chopped celery and continue cooking for a few minutes.
  5. Introduce the diced potatoes, mixing them well with the sautéed vegetables.
  6. Pour in the fish stock and diced tomatoes, stirring to combine.
  7. Season the soup with salt, black pepper, thyme, and smoked paprika.
  8. Bring the soup to a gentle simmer, cooking for about 15 minutes or until the potatoes are tender.
  9. Cut the fish fillets into bite-sized pieces and add them to the pan.
  10. Allow the soup to cook for an additional 5 to 7 minutes until the fish is thoroughly cooked.
  11. Finish by stirring in the lemon juice and chopped parsley.
  12. Serve hot and enjoy.
