Ingredients
- 1.5 lbs white fish fillets
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped celery
- 2 cups diced potatoes
- 4 cups fish stock
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon salt
- 0.5 teaspoon black pepper (freshly ground)
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 tablespoon fresh lemon juice
- 2 tablespoons parsley, chopped
Instructions
- Heat the olive oil in a large pot over medium heat until hot.
- Add the chopped onion to the pot, sautéing until translucent.
- Stir in the minced garlic and cook until fragrant.
- Toss in the chopped celery and continue cooking for a few minutes.
- Introduce the diced potatoes, mixing them well with the sautéed vegetables.
- Pour in the fish stock and diced tomatoes, stirring to combine.
- Season the soup with salt, black pepper, thyme, and smoked paprika.
- Bring the soup to a gentle simmer, cooking for about 15 minutes or until the potatoes are tender.
- Cut the fish fillets into bite-sized pieces and add them to the pan.
- Allow the soup to cook for an additional 5 to 7 minutes until the fish is thoroughly cooked.
- Finish by stirring in the lemon juice and chopped parsley.
- Serve hot and enjoy.
