Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup + 2 tablespoons water
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded coconut
  • 3/4 cup panko breadcrumbs
  • Shrimp, peeled and deveined


Instructions

  1. In a bowl, whisk together the flour, garlic powder, paprika, salt, and pepper. Gradually add the water, stirring until smooth.
  2. In another bowl, combine the shredded coconut and panko breadcrumbs.
  3. Take each shrimp by the tail, dip it into the batter, then coat it with the coconut-panko mixture.
  4. Heat oil in a frying pan over medium heat and fry the shrimp in batches for 2-3 minutes until golden brown.
  5. Let the fried shrimp rest on a wire rack to drain excess oil.
