Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup + 2 tablespoons water
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded coconut
- 3/4 cup panko breadcrumbs
- Shrimp, peeled and deveined
Instructions
- In a bowl, whisk together the flour, garlic powder, paprika, salt, and pepper. Gradually add the water, stirring until smooth.
- In another bowl, combine the shredded coconut and panko breadcrumbs.
- Take each shrimp by the tail, dip it into the batter, then coat it with the coconut-panko mixture.
- Heat oil in a frying pan over medium heat and fry the shrimp in batches for 2-3 minutes until golden brown.
- Let the fried shrimp rest on a wire rack to drain excess oil.
- Serve with sweet chili sauce for dipping.
