Ingredients

  • – 6 large bell peppers (about 900g)
  • – 3 tablespoons olive oil (45 ml)
  • – 1 onion diced
  • – 3 cloves garlic minced
  • – 14 ounces (400g) ground beef
  • – 1 3/4 cups (420 ml) cooked rice
  • – 14 ounces (400g) canned tomatoes diced
  • – 2 teaspoons (10 ml) salt
  • – 1 teaspoon (5 ml) black pepper
  • – 1 teaspoon (5 ml) chili powder
  • – 1 teaspoon (5 ml) paprika
  • – 1 teaspoon (5 ml) thyme
  • – 1 teaspoon (5 ml) parsley
  • – 1 1/4 cups (150g) cheddar cheese shredded


Instructions

  1. Set your air fryer to a temperature of 190°C (375°F) and allow it to preheat.
  2. Slice off the tops of the bell peppers, remove the seeds and membranes, and place them aside.
  3. In a large frying pan on medium-high heat, warm the olive oil and cook the diced onions and minced garlic until they become clear.
  4. Add the ground beef to the pan and cook until it loses its pink color.
  5. Stir in the cooked rice, salt, black pepper, chili powder, paprika, thyme, parsley, and diced tomatoes, and continue cooking until the mixture reaches a boil.
  6. Fill the hollowed peppers with the beef and rice mixture, ensuring they are filled to the brim.
  7. Arrange the stuffed peppers in the air fryer basket and cook them for 15 minutes.
  8. Sprinkle the shredded cheddar cheese on top of the peppers and cook for an additional two minutes, or until the cheese is fully melted.
