Ingredients
- – 2 (8-ounce/225g) boneless skinless chicken breasts
- – 1 ½ teaspoons olive oil
- – ½ teaspoon salt
- – ½ teaspoon garlic powder
- – ½ teaspoon paprika
- – ¼ teaspoon ground black pepper
- – 2 ounces (56g) cream cheese, softened
- – ¾ cup fresh spinach, finely chopped (24g)
- – 3 tablespoons (45 ml) grated parmesan
- – 2 tablespoons (30 ml) diced tomato
- – 2 cloves garlic, minced
- – ¼ teaspoon ground black pepper
- – ⅛ teaspoon salt
Instructions
- In a small bowl, mix all the filling components thoroughly until they are well blended.
- Lay each chicken breast on a flat surface and slice a pocket into the thickest side. Fill each pocket with the prepared mixture and close the opening with toothpicks.
- Coat the exterior of the chicken with olive oil, then evenly distribute salt, garlic powder, paprika, and ground black pepper over the surface.
- Set the air fryer to preheat at 375°F.
- Arrange the filled chicken breasts in the air fryer basket, ensuring they do not touch each other. Cook for 15 to 17 minutes or until the thickest part of the chicken reaches an internal temperature of 165°F. Allow to rest for 3 minutes, then extract the toothpicks before serving.
