Ingredients
- 2 large chicken breasts (500g)
- 1/4 cup mayonnaise (60ml)
- 2 cloves garlic, minced
- 1 cup seasoned bread crumbs (100g)
- 1/4 cup (60 ml) grated cheese (such as Parmesan)
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) pepper
- Vegetable oil spray
- Fresh parsley, finely chopped, for garnish
Instructions
- Begin by setting the air fryer to a temperature of 390 degrees Fahrenheit.
- Slice the chicken breasts in half to create four thin portions. Position one piece between two sheets of plastic wrap and gently flatten it using a meat mallet until even in thickness. Do the same for the other pieces.
- In a small mixing bowl, combine the mayonnaise with the minced garlic. Evenly coat the chicken pieces with this garlic mayo mixture.
- In a shallow dish, mix together the seasoned bread crumbs, grated cheese, salt, and pepper. Press each chicken piece into the crumb mixture, ensuring it adheres well, then flip to coat the opposite side. Repeat this process for all chicken pieces.
- Lightly spray the basket of the air fryer with vegetable oil spray. (Avoid using PAM as it might harm certain baskets.)
- Arrange the prepared chicken in the basket and cook for 8 minutes. Turn each piece over and continue cooking for an additional 5-7 minutes until they achieve a golden brown color and crispy texture. (If necessary, cook in batches to avoid overcrowding.)
- Take out the chicken and serve it warm, topping with extra grated cheese and a sprinkle of chopped parsley for decoration.
