Ingredients

  • – 500g (1.1lb) potatoes, such as Maris Piper or Russet. This is about 3-4 medium potatoes
  • – 1tbsp (15 ml) cornflour (cornstarch in USA)
  • – 1tbsp (15 ml) rice flour. This is optional, but ensures extra crispness. Replace with more cornflour (cornstarch) if you haven’t got any
  • – 3tbsp (45 ml) unsalted butter
  • – 1tbsp (15 ml) vegetable oil
  • – 1/2 tsp (3 ml) salt
  • – 1/2 tsp (3 ml) black pepper
  • – 1/2 tsp (3 ml) garlic powder
  • – 10-15 squirts spray oil
  • – Maldon salt to serve


Instructions

  1. Place the potatoes in a pot without peeling or cutting them. Submerge them in cold water.
  2. Set the pot on high heat until it starts to boil. Reduce the heat and let it gently boil for 15 minutes.
  3. Pour out the water and allow the potatoes to cool for 15 minutes.
  4. Remove any blemishes or dark spots from the potatoes, then use a rotary or box grater to shred them, protecting your hands if needed.
  5. Transfer the shredded potatoes to a bowl, sprinkle with cornflour and rice flour, and gently mix to coat them evenly.
  6. Incorporate the melted butter, vegetable oil, salt, pepper, and garlic powder, mixing thoroughly.
  7. Divide the mixture into 8 equal parts, forming each into a 1cm thick patty, preferably in a triangular shape.
  8. Arrange them on a parchment-lined tray and freeze for an hour.
  9. When ready to cook, spray the air fryer basket with oil, and place the patties in a single layer, leaving space around each one. You might need to cook in two batches.
  10. Spray the tops of the hash browns with additional oil to ensure even browning.
  11. Cook them in the air fryer at 200°C (400°F) for 13-15 minutes until they become golden.
  12. Prepare the next batch and serve both with a light sprinkle of Maldon salt.

Notes

  • Coat shredded potatoes with a mix of cornflour and rice flour for extra crispiness.
  • Freeze patties for at least an hour before air frying for better shape and crispiness.
  • Ensure space between hash browns in the air fryer for even browning; sprinkle with Maldon salt before serving.
