Description
A simple yet flavorful recipe combining cod fillets with creamy herby mayo and fresh asparagus, all cooked in an air fryer for a healthy dinner option.
Ingredients
- 25g bunch parsley
- 12g chives, half a bunch
- 1 lemon
- 2 large tins (700g) butter beans, rinsed and drained
- 125ml chicken/fish/vegetable stock
- 15g (3 tbsp) grated parmesan cheese
- 2 tbsp crème fraîche
- 1 garlic clove, minced
- 1 pack asparagus
- 4 cod fillets
- 2 tbsp mayonnaise
Instructions
- Preheat your air fryer to 180°C (355°F) or your oven to 190°C (375°F).
- Rinse the parsley and chives, finely chop them, and mix with lemon zest.
- Reserve ¼ of the herb mixture for coating the cod.
- In a roasting dish, mix butter beans, stock, parmesan, the majority of the herbs, crème fraîche, and minced garlic. Season with salt and pepper.
- Air fry beans for 10 minutes (or oven for 13 minutes).
- Prepare the asparagus by trimming and cutting into pieces.
- Mix the reserved herbs with mayonnaise and 1 tablespoon lemon juice.
- Pat cod fillets dry, season, and spread herby mayo on top.
- After beans are done, add asparagus to the dish and place cod on top. Cook in the air fryer at 200°C (390°F) for 7-12 minutes or oven at 220°C (430°F).
- Serve immediately garnished with lemon wedges.
Notes
Use fresh herbs for better flavor and feel free to customize the vegetables based on what’s in season.
