Ingredients
- 1 ½ pounds (680 g) boneless chicken thighs, cut into bite-size pieces
- 2 tablespoons rice vinegar (30 ml)
- 1 tablespoon soy sauce (15 ml)
- 2 teaspoons (10 ml) minced fresh ginger
- 3/4 teaspoon (4 ml) kosher salt
- 1/2 teaspoon (3 ml) freshly ground black pepper
- 2 large eggs, beaten
- 1 cup (128 g) cornstarch
- 3 tablespoons (45 ml) ketchup
- 3 tablespoons (45 ml) chili paste
- 3 tablespoons (45 ml) honey
- 2 tablespoons soy sauce (30 ml)
- 1 tablespoon sesame oil (15 ml)
- 2 garlic cloves, minced
- 4 scallions, thinly sliced
- Toasted sesame seeds
Instructions
- Line the basket of the air fryer with parchment paper.
- In a medium bowl, mix together the chicken, vinegar, soy sauce, ginger, salt, and pepper, ensuring the chicken is fully coated. Allow it to marinate for 15 to 20 minutes, or cover and refrigerate overnight for a longer marination.
- Whisk the eggs in a shallow dish.
- Place the cornstarch in another shallow dish.
- Dip each piece of chicken first into the egg mixture, then roll it in the cornstarch until fully covered. Lay the coated chicken pieces on the parchment inside the air fryer.
- Once all the chicken is coated and placed in the air fryer (you may need to do this in two rounds), lightly spray or brush them with cooking oil.
- Cook the chicken in the air fryer at 400ºF for 8 minutes. Flip the pieces over, apply a bit more oil, and continue cooking for an additional 7 minutes at 400ºF.
- While the chicken is cooking, prepare the sauce by combining ketchup, chili paste, honey, soy sauce, sesame oil, and garlic in a small bowl, stirring until smooth.
- After the chicken is done in the air fryer, move it to a medium bowl and toss it with the sauce. Optionally, sprinkle with sesame seeds and scallions to finish.

- Coat each piece of chicken thoroughly in cornstarch for extra crispiness when air frying.
- Avoid overcrowding the air fryer basket to ensure even cooking; cook the chicken in two batches if necessary.
