Description

Ingredients

  • 2 medium apples (Granny Smith), peeled, cored, and cut into 1-inch (2.5 cm) chunks
  • 2 tablespoons (30 ml) lemon juice
  • 120 ml water
  • 2 tablespoons (30 ml) brown sugar
  • 1 1/4 teaspoons (6.25 ml) ground cinnamon, divided
  • 1/2 tablespoon (7.5 ml) sugar
  • 6 egg roll wrappers
  • 60 ml apple juice


Instructions

  1. Warm up the air fryer to 400°F (200°C).
  2. Put the apple pieces in a medium pot. Pour lemon juice over them, then add water and mix. Scatter brown sugar and 1/4 teaspoon of cinnamon on the apples; mix once more. Cook on medium-low heat, stirring now and then, until the apples are as tender as you like, which takes around 40 minutes.
  3. Dust the apples with white sugar, then mix again. Let them cook for another 5 minutes. Take the pot off the heat and allow the mixture to cool down for about 10 minutes.
  4. Have a small bowl of water ready near your workspace. Position an egg roll wrapper in front of you with the corners at the top and bottom. Place 1 to 2 tablespoons of the apple mixture along the center of the wrapper.
  5. Fold the bottom corner of the wrapper over the filling, tucking the end underneath. Gently roll it once. Moisten the sides of the roll and fold the edges over (making a little pouch).
  6. Continue rolling the wrapper to the end and brush with water to secure. Lightly coat the finished roll with water. In a bowl, combine 1/4 cup white sugar with the remaining 1 teaspoon of cinnamon. Roll the egg roll gently in the cinnamon-sugar blend. Repeat with the rest of the filling and wrappers.
  7. Line the air fryer basket with parchment paper and place the finished egg rolls on it with care. Air-fry for 7 minutes, then flip them over. Keep air-frying until they achieve a light golden brown color, approximately another 7 minutes.

Notes

  • Adjust the sweetness of the apple mixture to taste by adding more or less sugar during cooking.
  • Ensure the egg roll wrappers are tightly sealed to prevent filling leakage while cooking.
  • Enhance the flavor by adding a sprinkle of nutmeg or a dash of vanilla extract to the apple mixture before rolling the egg rolls.
