A quick and delightful meal that combines shrimp and fresh vegetables in a savory omelet.
Ingredients
- 4 large eggs
- 1 cup cooked shrimp, chopped
- 1/4 cup green onions, chopped
- 1/4 cup bean sprouts
- 1/4 cup bell pepper, chopped
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- Salt and pepper, to taste
- Oil for frying
Instructions
- In a bowl, whisk together the eggs, soy sauce, cornstarch, salt, and pepper until well combined.
- Fold in the chopped shrimp, green onions, bean sprouts, and bell pepper.
- Heat a pan over medium heat and add a bit of oil.
- Pour a scoop of the egg mixture into the pan, spreading it evenly.
- Cook until the edges are set and the bottom is golden brown, about 2-3 minutes.
- Flip and cook the other side for another 2 minutes.
- Repeat with the remaining mixture.
- Serve hot with additional soy sauce or other sauces, if desired.
Notes
Consider adding other vegetables like carrots or snap peas for extra crunch. Allow the egg mixture to rest for a few minutes to meld flavors.
