A quick and flavorful baked cod dish with a zesty lemon dill sauce, perfect for family dinners or entertaining guests.
Ingredients
- 4 fillets of cod
- 2 tablespoons of olive oil
- Salt, to taste
- Pepper, to taste
- 1 lemon (zest and juice)
- 2 tablespoons of fresh dill
- 1 tablespoon of Dijon mustard
- 2 cloves of garlic (minced)
- 1 tablespoon of honey
Instructions
- Preheat the oven to 400°F (200°C).
- Grease a baking dish lightly with olive oil.
- Arrange the cod fillets in the dish. Season with salt and pepper to taste.
- Mix together the lemon zest, lemon juice, minced garlic, fresh dill, Dijon mustard, honey, and remaining olive oil in a small bowl.
- Pour the lemon dill sauce evenly over each cod fillet, ensuring they are well coated.
- Bake for 15-20 minutes, or until the cod flakes easily with a fork. Remove from the oven and let it rest for a few minutes before serving.
Notes
For extra flavor, consider marinating the cod in some of the lemon dill sauce for an hour before baking. Always use fresh herbs for the best taste.
