Description

A quick and flavorful baked cod recipe topped with a tangy lemon dill sauce, perfect for weeknight dinners.


Ingredients

  • 4 fillets of cod (fresh or fully thawed if frozen)
  • 2 tablespoons of olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 lemon (zest and juice)
  • 2 tablespoons of fresh dill
  • 1 tablespoon of Dijon mustard
  • 2 cloves of garlic (minced)
  • 1 tablespoon of honey


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together olive oil, Dijon mustard, minced garlic, lemon juice and zest, honey, salt, and pepper in a small bowl.
  3. Add in the fresh dill and combine well.
  4. Place the cod fillets in a prepared baking dish and brush the lemon dill sauce over the fillets, ensuring they are evenly coated.
  5. Bake for 12-15 minutes, or until the cod flakes easily with a fork and is cooked through.
  6. Remove from the oven and serve hot.
