A quick and flavorful baked cod recipe topped with a tangy lemon dill sauce, perfect for weeknight dinners.
Ingredients
- 4 fillets of cod (fresh or fully thawed if frozen)
- 2 tablespoons of olive oil
- Salt, to taste
- Pepper, to taste
- 1 lemon (zest and juice)
- 2 tablespoons of fresh dill
- 1 tablespoon of Dijon mustard
- 2 cloves of garlic (minced)
- 1 tablespoon of honey
Instructions
- Preheat the oven to 400°F (200°C).
- Mix together olive oil, Dijon mustard, minced garlic, lemon juice and zest, honey, salt, and pepper in a small bowl.
- Add in the fresh dill and combine well.
- Place the cod fillets in a prepared baking dish and brush the lemon dill sauce over the fillets, ensuring they are evenly coated.
- Bake for 12-15 minutes, or until the cod flakes easily with a fork and is cooked through.
- Remove from the oven and serve hot.
