Ingredients

  • – 4 chicken breasts (about 1 kg)
  • – 1 tablespoon olive oil (15 ml)
  • – 1 teaspoon paprika (5 g)
  • – 1 teaspoon salt, divided (5 g)
  • – 1/2 teaspoon garlic powder (2.5 g)
  • – 1/2 teaspoon onion powder (2.5 g)
  • – 4 ounces beef cream cheese, softened (113 g)
  • – 1/4 cup grated Parmesan (25 g)
  • – 2 tablespoons mayonnaise (30 ml)
  • – 1 1/2 cups chopped fresh spinach (225 g)
  • – 2 teaspoons minced garlic (10 ml)
  • – 1/2 teaspoon red pepper flakes, more or less to taste (2.5 g)


Instructions

  1. Position the chicken breasts on a chopping board and carefully create a slit on the side of each one using a sharp knife.
  2. Coat both sides of the chicken with olive oil.
  3. In a small bowl, mix together the paprika, half of the salt, garlic powder, and onion powder. Evenly distribute this spice blend over the chicken.
  4. In another small bowl, thoroughly mix the beef cream cheese, Parmesan cheese, mayonnaise, fresh spinach, minced garlic, red pepper flakes, and the rest of the salt.
  5. Fill each chicken breast with the prepared stuffing.
  6. Arrange the stuffed chicken breasts in a greased air fryer basket, ensuring they are in a single layer. If the air fryer is small, cook them in batches. Keep the cooked pieces warm in a low oven, covered with foil, as you prepare the next batch.
  7. Set the air fryer to 375°F and cook for 15-20 minutes, ensuring the internal temperature reaches 165°F in the thickest part of the chicken.

Notes

  • Use Greek yogurt instead of mayonnaise for a healthier stuffing. Add sun-dried tomatoes or roasted red peppers for extra flavor. Sprinkle cayenne pepper or hot sauce for a spicier kick.
